Corned Beef Hash

6 Medium Potatos
1 Onion
1 tsp Oil
340g Can Corned Beef
420g Can Baked Beans
Optional: Grated cheese, Worcestershite sauce, Gravy

* Boil, drain and mash potatos
* Fry the onions and stir into mash (or into beef later depending on your preferance)
* Shred the corned beef and pop in a dish (I find if I cut it into cubes and then mash it it is fine)
* Stir in Baked Beans (add gravy and sauce if wanted)
* Spoon the mash over the beef and then sprinkle cheese on top
* Bake for 35-30 mins at 180 degrees with a pan underneath to catch any drips until golden brown and crispy on top

Coconut Ice

250g Coconut
150g Icing Sugar
4 tblsp Condensed Milk
Red food colouring

* Mix all but the colouring together then split the mixture in two
* Colour one 1/2 pink then press both into a cling film lined tray
* Refrigerate then turn out and cut

Spice Biscuits

110g Butter
150 Caster Sugar
2 Egg Yolks
255g Plain Flour
1 tsp Mixed Spice
1 tsp Cinnamon

* Cream butter and sugar together then add eggs and beat well
* sift in flour and spices until a firm dough
* Roll out to approx .5 cm amd cut out shapes
* Bake 8-15 minutes at 180 degrees until light brown
* Cool and ice is wished

NOTE: If storing only ice a day before being eaten

Bread and Butter Pudding

4 slices of buttered Bread cut into cubes
300ml Milk
2 eggs
Sugar
1/2 tsp Cinnamon
1/2 Nutmeg

* Layer bread and sugar in bowl
* Whisk egg, milk and spices toegther and pour over bread
* Leave to stand for at least 15 minutes
( Bake for 25-30 mins at 180 degrees until the top is golden brown

Gingerbread

First used this recipe in 2005 when Kristy and I made a church and figures for christmas - see below for pictures - we were very pleased by it!

5 Cups Plain Flour
1tsp Baking Powder
1 tsp salt
2 tsp ginger
2 tsp cinnamon
1 tsp nutmeg
1 tsp cloves
1 cup vegetable fat (eg pura)
1 cup sugar
1 cup golden syrup
1/4 cup black treacle
2 eggs (beaten)

* Put flour, baking powder, salt and spices into a bowl
* melt the fat and cool for a few mintues so to not cook the eggs. Add eggs, sugar, syrup and treacle to the fat
* Pour the liquid ingredients into the dry ones and mix well - add a little more flour if necessary
* Cut out shapes and pop on a tray
* Fan oven 160 degrees - Small pieces and cookies bake for 6-8 minutes, large pieces (such s the side of a church) 8 or more minutes
* Leave out to dry and harden over night

Notes: When doing large peices it is easier to roll out the dough on the baking tray and cut out the piece but leave the surrounding cut off bits when baking so that you will get straight edges.
* If wrapped in cling film, uncooked dough will keep for weeks. Let dough get to room temp and knead before using

Chicken Pot Pie

750g Potatos
50g Butter + a little extra melted
40g Plain Flour
600ml Milk
2 tbspm Parsley (chopped) + extra to garnish
1/2 tsp mustard powder
375g cooked cubed chicken
200g Mixed veg (leave out of JJ)
3 hard boiled eggs
50g grated cheese

* Par boil the potatoes then slice into rounds
* make betchemel sauce with butter flour and milk
* add parsley, mustard, chicken and veg to the sauce and then put in serving dish
* Put sliced eggs on top of mixture then cover with sliced potato
* Brush top with melted butter and top with cheese
* Baked at 190 degrees for 30 mins until top is golden

VARIATIONS : Chop cooked bacon in with chicken or fry the chicken is spicy coating before adding to sauce

Toad in the Hole

8 sausages
4oz/110g Plain flour
1/2 pt (300ml) milk
2 small eggs
1/2 tsp salt
oil

* Cook Sausages
* Put oil in dish and heat until smoking hot
* Make batter from flour, milk, eggs and salt
* Put sausages in the hot oil and add batter on top
* Bake for approx 5 - 10 mins until the batter is golden brown

Rock Cakes ROCK!

200g S R Flour
100g Marg
100g Sugar
1 egg
Splash of milk

(can add dried fruit or chocolate chips or, my favorite, glace cherries)

* Rub the marg into the flour until "breadcrumby"
* Stir in Sugar and egg - if the mixture is a little too solid add milk a little at a time
* add the fruit/chocolate/cherries last
* Bake for 10-20 mins at 200 degrees

Pancakes are devine....

1 egg
1/2 pt milk (300ml)
8oz flour

Mix it all together and spoon it into a pan of hot oil.

Eat, eat and then eat some more!

Long Island Iced Tea

1 part Vodka
1 part Tequila
1 part Rum
1 Part Gin
i part Triple Sec
1 1/2 part sweet and sour mix
Splash of coke

Mix together and pour over ice

NOTE: JJ prefers 1/2 shots of spirits in a pint glas topped up with coke

Sweet and Sour Mix

3 parts water
3 parts Sugar
2 parts Lemon Juice
2 parts Lime Juice

* Put water and sugar in a pan and heat until sugar is dissolved. Remove from heat and allow to cool.
* Add Lemon and Lime and chill for one hour
* Lasts for approx 1 week on the fridge

Well I decided to start a new blog and this one is basically just for me. Other people can view it bit it won't be very interesting I'm afraid - it is merely here to catalogue my recipes as my handwritten book is begining to fall apart and covered in greasespots and cake mixture!
